Dive Into Summer With a Seafood Salad Recipe
Looking for an all-in-one dinner? A dinner that's not too difficult to prepare and cool enough to help you relax after a long day? This is your recipe. A delicious salad topped with quick seafood is the protein-vegetable mix you can use to keep your sugars up. Double the ingredients and serve to a family or keep them single-serving size and take leftovers for lunch.
A friend, Helen Spear, made this summer salad for me once and I thoroughly enjoyed it—enough to write about it. This salad is easy to prepare and will be your next go-to after a long day. Relax and slow down—it’s summertime and it's time to enjoy a seafood salad.
1 head of romaine lettuce, chopped (or lettuce of your choice) 1 bunch of fresh arugula 1 container of cherry tomatoes, halved 1 red onion, diced 1 to 2 scoops of fresh black beans 1 green bell pepper, diced 4 lemons 1 container of capers 1 bottle of olive oil 1 bottle of balsamic vinaigrette 1 cube of Parmesan cheese, sliced into small bites 10 to 15 fresh shrimp or 12 ounces of smoked salmon loxDirections: Salad: Layer romaine lettuce first, then arugula. Drop in your halved cherry tomatoes and capers (about four tablespoons). Add three handfuls of cooked and prepared black beans and all of your diced bell pepper as well as the diced onion. Boil your shrimp for about five minutes until pink and tender. Drain and leave whole on top of the salad or dice and mix in with other ingredients. and it was probably the best we've ever had. It was so good, my hubby and I were practically fighting over the spoon. Note to self: Never share food with hubby when you both are starving! Appetizer was seared ahi tostadas with salsa.

Red Kitchen Recipes: Seared Ahi Tuna
Arkansas is a landlocked state, so unless you find a market that has fish flown in fresh 2 or 3 times a week (like Terry's Finer Foods), you may rely on fish that has been flash frozen when caught. I get my Ahi Tuna from Sam's Club because it is just that. Another advantage is that I can have a bag full of individually wrapped filets that thaw easily overnight, and I can keep the bag on hand for a little while without it going bad. I love the combination of tuna and avocado! After I split my avocado, I douse it with lime juice, garlic powder, sea salt, and pepper. Then I slice it thinly. I love the hand rolls that they make in sushi or Japanese restaurants, so I decided to make a hand roll with rice paper - the wrapper that makes Vietnamese springrolls. It's fun to write about what you love...and I love to cook. I also love photo editing. I've been playing around with Gimp, which is similar to Photoshop. So this blogging thing is the perfect platform - it challenges me to cook good food for my family and friends. Then I get to chronicle images and recipes that I've created in a place that I can refer back to any time. I love that. We have an "East Meets West" family. My college English professor with his phD from Princeton would take off points for cliches, but I just really want to use that one to describe our versatile family. I worked in restaurants while putting myself through college, and it was fascinating to watch the line cooks prep the food in an open kitchen. I've picked up a few techniques along the way. Then there's the fact that my TV is always on Food Network. My husband always changes the TV from ESPN to Food Network when he leaves the room for me. Then there are all the cookbooks that I pick up at the library. If they're really good, I actually purchase them from Barnes & Noble, the ultimate bookstore that sells Starbucks Caramel Lattes and comes with a children's section! So...yes, I love to cook.
